Beef Gyros

A pillow of soft flat bread encasing perfectly grilled steak, a mouth-watering dollop of tzatziki and a scattering of crisp vegetables. The Greeks do it best.
Serves 4

ingredients
  • 500g Stockyard Gold sirloin, cut into strips (any Stockyard Wagyu loin cut would also work)
  • 1 tbsp olive oil
  • 1 tbsp dried oregano
  • 1 tbsp dried thyme
  • 4 pita breads
  • 2 tomatoes, sliced
  • 1 red onion, sliced thinly
  • 8 lettuce leaves (any variety)
  • Additional, 1 tbsp olive oil
  • 1 ½ cups natural Greek yoghurt
  • 2 cloves garlic, minced
  • 2 tbsp chopped fresh dill
  • 1 tbsp lemon juice
  • 1 cucumber, grated & strained
  • Salt & pepper to taste

method
  1. To make the tzatziki, begin by grating the cucumber then squeezing the excess liquid between your hands. Place drained and grated cucumber into a bowl with the yoghurt, garlic, dill, lemon juice, salt and pepper. Mix thoroughly to combine. Set aside
  2. In a bowl, marinate the Stockyard Gold strips in olive oil, oregano & thyme.
  3. Prepare a pan on medium to high heat, cook the beef. The time each side will depend on the thickness of your strips, but roughly 2 minutes should be enough.
  4. Brush your pita with oil and briefly heat in the oven or in a pan on the stove before assembling.
  5. Once ready to assemble, place a large dollop of tzatziki on the pita and layer with lettuce first, then tomato, red onion and top with beef. Enjoy!
