- 500g Stockyard Gold sirloin, cut into strips (any Stockyard Wagyu loin cut would also work)
- 1 tbsp olive oil
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 4 pita breads
- 2 tomatoes, sliced
- 1 red onion, sliced thinly
- 8 lettuce leaves (any variety)
- Additional, 1 tbsp olive oil
- 1 ½ cups natural Greek yoghurt
- 2 cloves garlic, minced
- 2 tbsp chopped fresh dill
- 1 tbsp lemon juice
- 1 cucumber, grated & strained
- Salt & pepper to taste

- To make the tzatziki, begin by grating the cucumber then squeezing the excess liquid between your hands. Place drained and grated cucumber into a bowl with the yoghurt, garlic, dill, lemon juice, salt and pepper. Mix thoroughly to combine. Set aside
- In a bowl, marinate the Stockyard Gold strips in olive oil, oregano & thyme.
- Prepare a pan on medium to high heat, cook the beef. The time each side will depend on the thickness of your strips, but roughly 2 minutes should be enough.
- Brush your pita with oil and briefly heat in the oven or in a pan on the stove before assembling.
- Once ready to assemble, place a large dollop of tzatziki on the pita and layer with lettuce first, then tomato, red onion and top with beef. Enjoy!
