- 250g Stockyard Gold sirloin (any Stockyard Wagyu loin cut would also work)
- 8 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp whole-grain mustard
- 2 tbsp finely chopped eschalots
- 1 baby cos lettuce
- 1 cup watercress
- 1 cup grape tomatoes, halved
- 1 avocado, pitted, peeled and thinly sliced
- Sea salt and cracked pepper
Lachie’s Simple Beef Salad is the ultimate no-fuss meal, perfect for a quick weekend lunch or a wholesome midweek dinner. Fresh, vibrant, and loaded with flavour, it’s sure to become a household favourite!

- Begin by seasoning the beef with salt and pepper.
- Heat a large fry pan over medium high heat and add in 2 tbsp of the olive oil into the pan. Sear the beef until browned on all sides (3-4 minutes per side). Transfer to a carving board, cover loosely with aluminium foil and let rest for 5 to 10 minutes.
- In a small bowl, whisk together the vinegar, mustard and chopped eshallots. Slowly whisk in the remaining 6 tbsp of olive oil. Season the vinaigrette with salt and pepper.
- In a large bowl, combine the lettuce, watercress and tomatoes. Add the vinaigrette and toss gently then arrange on a serving plate and top with avocado. Slice the beef across the grain and arrange on the salad. Season with more salt and pepper and serve immediately.
