Lachie's Simple Beef Salad

A quick and easy weekend lunch or mid-week dinner, this salad is a go-to!

ingredients
  • 250g Stockyard Gold sirloin (any Stockyard Wagyu loin cut would also work)
  • 8 tbsp olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp whole-grain mustard
  • 2 tbsp finely chopped eschalots
  • 1 baby cos lettuce
  • 1 cup watercress
  • 1 cup grape tomatoes, halved
  • 1 avocado, pitted, peeled and thinly sliced
  • Sea salt and cracked pepper
 Lachie’s Simple Beef Salad is the ultimate no-fuss meal, perfect for a quick weekend lunch or a wholesome midweek dinner. Fresh, vibrant, and loaded with flavour, it’s sure to become a household favourite!

method
  1. Begin by seasoning the beef with salt and pepper.
  2. Heat a large fry pan over medium high heat and add in 2 tbsp of the olive oil into the pan. Sear the beef until browned on all sides (3-4 minutes per side). Transfer to a carving board, cover loosely with aluminium foil and let rest for 5 to 10 minutes.
  3. In a small bowl, whisk together the vinegar, mustard and chopped eshallots. Slowly whisk in the remaining 6 tbsp of olive oil. Season the vinaigrette with salt and pepper.
  4. In a large bowl, combine the lettuce, watercress and tomatoes. Add the vinaigrette and toss gently then arrange on a serving plate and top with avocado. Slice the beef across the grain and arrange on the salad. Season with more salt and pepper and serve immediately.
